This Star Spangled Mojito, a RA Sushi specialty, is big on flavor and long on cool — just the thing for a long, hot Independence Day weekend. It's $8 at RA, in La Encantada at 2905 E. Skyline Drive, which will be open this holiday weekend.
It's also pretty simple to make.
RA's Star Spangled Mojito
• Squeeze 2 limes
• 4 mint leaves
• 1.5 ounces white rum
• 1 ounce blueberry purée
• Half an ounce Triple Sec
• Splash soda water
• Splash lemon-lime soda
• 3 blueberries for garnish
• Mint sprig for garnish
Squeeze the limes and muddle the mint leaves to release their flavors. Add rum, purée and Triple Sec. Pour into a glass and fill with ice. Add a splash of soda water and a splash of lemon-lime soda. Garnish with blueberries and a sprig of mint.
Blueberry purée: Mix equal parts of blueberry preserves with simple syrup and place mixture in squeeze bottle for easy use. Simple syrup is one part water to one part sugar, warmed until the sugar dissolves.
