Nadine's Bakery knows cakes

Tucson, Arizona | Published: 08.28.2008
You can pretty much have your cake any way you want it at Nadine's Bakery.
You can order one for any occasion, picking from several cake flavors, 20 fillings and more than a half-dozen icings. There are also more than 25 specialty cakes, such as Italian rum custard, coconut cream, German chocolate, Oreo and red velvet. Or you can just run in and grab one that's ready to go.
The confectionary institution at 4553 E. Broadway also makes a whole range of pastries, cookies and breads.
The cake in the HoCo Festival special section was made for an actual wedding last weekend.
Trish Ratto, one of the bakery's two main wedding cake decorators, has more than 25 years of experience. She's been with Nadine's for the last 19.
That's a lot of wedding cakes, when you consider the bakery averages four a week and sometimes does up to 10.
Are you seeing any wedding cake trends?
"People lately have been going more for fondant," she said. But, she added, butter cream frosting remains the clear favorite and looks just as smooth.
How many people save the top of their cake for their first anniversary?
"Maybe 10 percent."
How many guests would this three-tiered cake on the cover feed?
"100."
Is it bad form to ask for seconds?
"I don't go to the weddings, but a lot of times they have just enough."
Is smashing the cake into your beloved's face a good idea?
"I don't think so. To me, that's not a good way to start a marriage."
What's the most unusual cake you've decorated?
"In the last year we've done a couple of divorce cakes."
