Eatery, market fail inspections, regain licenses

One restaurant and one market failed health inspections last month, but both passed follow-up inspections that restored their regular food licenses.
Las Cazuelitas de Tucson, 1365 W. Grant Road, and Ferranti's Fine Food Market, 6616 E. Grant Road, were issued provisional licenses for critical violations in food safety or cleanliness.
The county labeled seven other establishments as needing improvement.
Ferranti's Fine Food Market
On Oct. 20, an inspector reported that several food items were not being maintained at required temperatures due to a problem with the market's refrigerator. The inspector also reported that the dishwasher was not reaching a minimum temperature of 160 degrees during its final rinse cycle, and was instead testing out at 102 degrees.
The inspector also noted that lights in a pastry case were not properly shielded, and that an employee was handling pastries with gloves made of latex material, which is not approve for food-handling
Six days later, the market had repaired the faulty equipment and passed a follow-up inspection.
The refrigerator was actually in the process of being repaired at the time of the first inspection, said Phil Ferranti, owner of the market.
"The repair guy was already there working on it, but I understand that the inspector is bound by her rules," Ferranti said. "We had an electrical problem with the dish machine, and the compressor was out on the refrigerator. Both of those were repaired and we took care of the other issues, and everything was fine by the re-inspection."

On Oct. 24, an inspector reported that a portion of the ceiling above a sink was "falling down," that the employees were not able to wash their hands or properly clean utensils and dishes because the water was turned off for water-heater repairs, and that a cutting board and a prep knife contained dried food debris.
The inspector also noted that a waitress bused tables and handled dirty dishes, then handled clean dishes and a serving tray without properly washing her hands, and that a dishwasher also handled dirty dishes, then clean ones without properly washing his hands.
The manager of the restaurant did not return phone calls seeking comment.
