Make some sandwiches or panini

As we settle into our summer routine of cooking outdoors, most of us are efficient at grilling burgers and steaks. But how about making sandwiches, pizzas and corn bread on the grill?
Celebrity chef Todd English has joined the Grain Foods Foundation to develop sandwich recipes straight off the grill.
English created some innovative recipes for the summer promotion that will give grilling gurus something new to add to their culinary repertoire. He fills pitas with grilled vegetables, hummus and apricot yogurt; puts grilled andouille on a slit pretzel roll; combines barbecued eel, pork belly, and avocado on a sesame seed bun; and layers a Cuban sandwich with grilled pork, ham, cheese and kimchee (Korean pickled cabbage). The sandwiches are grilled until the bread is crisp and cheese is melted.
English was open to creating recipes around basic bread "to get people to think outside the box, and use a different kind of grain or bread to make it more interesting."
"Just changing the bread for the burger is like changing clothes for a party," English said in a telephone interview while on his way to Olives, his restaurant in New York City.
Karen Adler, co-author of "Weeknight Grilling With the BBQ Queens" (Harvard Common Press, $14.95) suggests making panini on the grill. To do this, you can use bricks covered with foil to compress the sandwich, Adler said in a phone interview from her home in Kansas City, Mo. A heavy cast-iron skillet or a bacon press can also be used.
Women tend to grill differently from guys, and Adler and her co-author, Judith Fertig, encourage "grill once, eat twice."
Leftover grilled vegetables are great for panini, pizzas and quesadillas, Adler said. Quesadillas can be placed on the grill rack, and, with the lid closed, grilled until the cheese melts and the bottom tortilla has grill marks.
While toasting sandwiches on the grill, remember not to turn your back. They can burn quickly.
